An unusual dessert made with bitter cocoa, chocolate and fine black truffle! Gluten-free bitter cocoa spaghetti and 85% dark chocolate sauce with fine black truffle petals and edible violet on 85% dark chocolate flakes, white chocolate, coconut and walnut kernels.

Ingredienti

70g gluten-free flour of your choice
20g unsweetened cocoa powder
Cane sugar to taste
85% dark chocolate as desired
Fresh coconut for grating as desired
1 edible violet
Walnut kernels to taste
White chocolate to taste
Fresh Black Truffle to taste

Place the sifted gluten-free flour and unsweetened cocoa in a bowl. Mix and add the egg and a pinch of brown sugar. Combine the ingredients to form a homogeneous dough. Shape into a ball, wrap in a kitchen towel, and let it rest for about half an hour.

Once the necessary time has passed, place the dough in the pasta machine with the spaghetti die. Turn on the machine and extrude the cocoa spaghetti.

Cook the spaghetti in boiling water with brown sugar and cocoa. After 5-6 minutes, drain the spaghetti and sauté them for one minute in a saucepan where you have melted some 85% dark chocolate.

Meanwhile, grate some 85% dark chocolate and a smaller amount of white chocolate. Chop some walnut kernels and fresh coconut.

Plate by creating a base with grated chocolate, chopped walnuts, and coconut. Place the cocoa and dark chocolate spaghetti in the center. Garnish with precious black truffle petals, edible violet, and a dusting of cocoa.

Note

To make this culinary experience even more memorable, pair the dish with a glass of aromatic white wine like Sauvignon Blanc. The wine's freshness and acidity will perfectly balance the creaminess of the walnut cream and the intensity of the truffle.

STORAGE

Truffles are a very delicate ingredient. They can be stored in a cool place for a short period (maximum 7-8 days) wrapped in absorbent paper and sealed in an airtight container. See also the TuberPack.

TIP

Before enjoying your truffle, make sure to clean it thoroughly of any traces of soil by rinsing it moderately and using a brush or semi-hard bristled brush.
