Red from the Sea, Black from the Land
The pumpkin was baked with shallots, black garlic, rosemary, and ginger, then blended and sieved to create a super aromatic cream that pairs well with the sweetness of the red prawn, the flavour of the Precious Black Truffle — often called "sweet truffle" — and the freshness of the parsley sauce.

Fresh truffle is a very delicate ingredient. You can store it in a cool place for a short period (maximum 7-8 days) wrapped in absorbent paper and sealed in an airtight container. See also the TuberPack.
White Truffle: September 15th to January 31st.
Black Truffle: December 1st to March 15th.
Muscat Truffle: November 15th to March 15th.
Summer Truffle or Scorzone: May 1st to August 31st and September 21st to November 30th.
Hooked Truffle: October 1st to January 31st.
Winter Black Truffle: December 15th to March 15th.
Bianchetto Truffle: January 15th to April 15th.
