A refined first course: traditional Tuscan pici pasta with Tuscan pecorino cream and black pepper, veal jus, and shavings of fine black truffle.

Ingredienti

4 nests of fresh Pici pasta
100g Tuscan pecorino
Black pepper to taste
30g veal jus
Fine Black Truffle to taste
Butter q.s.
Salt to taste

Istruzioni

Grate the Tuscan pecorino with a generous grinding of black pepper.

Toast the black pepper in a pan for 1 minute, then deglaze with a ladle of cooking water.

Cook the pici for 4 minutes in boiling water, then drain into a pan with the toasted pepper and finish cooking by risottare the pasta.

When the heat is off, stir in the pecorino cream and a knob of butter until creamy. Plate, adding the veal jus and shavings of fine black truffle.

Note

To make this culinary experience even more memorable, pair the dish with a glass of aromatic white wine such as a Sauvignon Blanc. The freshness and acidity of the wine will perfectly balance the creaminess of the walnut cream and the intensity of the truffle.

STORAGE

Fresh truffles are a very delicate ingredient. You can store them in a cool place for a short period (maximum 7-8 days), wrapped in absorbent paper and sealed in an airtight container. See also TuberPack.

TIP

Before enjoying your truffle, make sure to clean off all traces of soil by rinsing it moderately and using a brush or a semi-hard bristled brush.

Muscat Truffle: November 15th to March 15th.
Summer Truffle or Scorzone: May 1st to August 31st and September 21st to November 30th.

Winter Black Truffle: December 15th to March 15th.
Bianchetto Truffle: January 15th to April 15th.
