Follow the instructions to make this small finger food, a rich, flavorful, and aromatic appetizer. Wholemeal crouton with taleggio cream and precious black truffle.

Ingredienti

80 grams of Taleggio
4 teaspoons of Moscato Passito
4 slices of whole wheat sandwich bread
Fresh Black Truffle to taste

Istruzioni

In a bowl, combine the Taleggio, rind removed (kept at room temperature for at least 30 minutes), and the Moscato passito.

Mash the cheese with a fork, working vigorously, until you get a rather thick cream.

Using a 5 cm diameter pastry cutter, cut out a disc from each slice of bread.

Heat a non-stick pan until hot and toast the bread discs until crispy, being careful to turn them often so they don't burn. Place the bread on a wire rack to cool.

Spread the Taleggio and Moscato cream on the cold crostini and finish with a few not-too-thin slices of fine black truffle.

Note

To make this culinary experience even more memorable, pair the dish with a glass of aromatic white wine such as Sauvignon Blanc. The wine's freshness and acidity will perfectly balance the creaminess of the walnut cream and the intensity of the truffle.

Fresh truffle is a very delicate ingredient. It can be stored in a cool place for a short period (maximum 7-8 days), wrapped in absorbent paper and sealed in an airtight container. See also TuberPack.
