This cream of cheese and fine black truffle is an ideal sauce to use on bruschetta, crostini, baked potatoes, and boiled potatoes. Also excellent for pasta and vol-au-vents. A quick version of the Valdostana fondue, a cheese sauce flavored with fine black truffle ready in just a few minutes.

The cheese cream is used warm, poured over croutons, bruschetta, French fries or baked potatoes, boiled potatoes, and sautéed vegetables. Also excellent as a cream for seasoning pasta.

Ingredienti

55g Cheese (fontina and/or Emmentaler)
1.6 oz Parmesan cheese
70g Milk
20 g Butter
150g fresh liquid cream (or béchamel)
20 g Precious Black Truffle

Istruzioni

Cut the fontina and/or Emmentaler into very small pieces.
Step 1

In a deep saucepan, combine the cubed cheese, grated Parmesan, milk, butter, and fresh liquid cream (or béchamel sauce). Place over heat.

Cook over very low heat, stirring very often, until the cheeses are completely melted and form a smooth cream.

Once off the heat, add the grated Fine Black Truffle.

Enjoy your fine meal!

Note

The cheese and Black Truffle cream can be stored in the refrigerator, covered with plastic wrap, for 3-4 days. Before use, remove it from the refrigerator and heat it, adding a little milk to thin it, if necessary.

STORAGE

Fresh truffles are a very delicate ingredient. They can be stored in a cool place for a short period (maximum 7-8 days) wrapped in absorbent paper and sealed in an airtight container. See also the TuberPack.

Precious White Truffle: from September 15th to January 31st.
Precious Black Truffle: from December 1st to March 15th.
Muscat Truffle: from November 15th to March 15th.
Summer or Scorzone Truffle: from May 1st to August 31st and from September 21st to November 30th.
Hooked Truffle: from October 1st to January 31st.
Winter Black Truffle: from December 15th to March 15th.
Bianchetto Truffle: from January 15th to April 15th.
