Battuta di carne (Italian beef tartare) is a very popular main course in Italian cuisine. The choice of meat is essential: it must be thick enough and tender. It is important to use a very sharp knife and cut the meat gradually, from larger pieces to smaller pieces.

Ingredienti

300 g aged veal sirloin
100g burrata
20g anchovy drippings
40 g of Precious Black Truffle
Roasted hazelnuts to taste
Hazelnut oil as needed
Mixed leaf salad to taste
Arugula to taste
Cold water as needed

Istruzioni

Finely chop the meat with a knife, season with a few drops of anchovy paste, a couple of tablespoons of cold water, and hazelnut oil.

Press part of the tartare with a cookie cutter to create an indentation, then insert the burrata and cover with the remaining meat. Chill.

Unmold the tartare onto a plate, arranging a few burrata flakes around it.

Add sliced Black Truffle to the tartare, then the salad, pieces of toasted hazelnut, a drizzle of oil, and a few salt flakes.

STORAGE

Fresh truffles are a very delicate ingredient. They can be stored in a cool place for a short period (maximum 7-8 days) wrapped in absorbent paper and sealed in an airtight container. See also TuberPack.

Black Truffle: December 1st to March 15th.
Muscat Truffle: November 15th to March 15th.
Summer Truffle or Scorzone: May 1st to August 31st and September 21st to November 30th.

Winter Black Truffle: December 15th to March 15th.
Bianchetto Truffle: January 15th to April 15th.
