Truffle eggs and cream puffs are still my passion!
Every time I ate truffle, it was shown to me wrapped in paper in a glass jar. To see it, one had to open the jar and remove it from the paper: this was, in fact, the traditional solution for better preservation.
Being in the food packaging sector, I was inspired to create an innovative container. I designed a transparent box and placed special paper at the top and bottom to absorb the truffle's moisture and condensation, allowing it to be seen without touching it. After the first samples, I was very enthusiastic, but unfortunately, the costs were high, and the results were limited. However, I later solved the condensation problem that prevented a clear view of the truffle, but at this point, the issue of its pungent aroma, which many people don't like, remained to be addressed. It naturally occurred to me to use a gas barrier bag so that once the Tuberpack® was placed inside the heat-sealed bag, the air would be retained, which is sufficient to extend the truffle's life and reduce weight loss to only 3% compared to the usual 10-15% if left exposed to air. The most important aspect of this solution was being able to put it in the fridge without contaminating other foods.
These innovative features of the project were awarded at Expo 2015 as the best innovative container "Feeding the Future: Energy of Tradition" (by Confartigianato Italia)
