5 best ways to store truffles

Who would be happy to spend money on a good truffle and not be able to enjoy it at its best? Therefore, the first step is to learn how to store truffles at home to keep their aroma and freshness intact.
Truffles are very delicate and sensitive to moisture. Remember that white truffles are the most delicate, while black truffles are more resistant (it's a fact, we don't just say it because we specialize in Fine Black Truffles :-p )
The advice is always to consume truffles as soon as possible to enjoy their authentic flavor. But if you can't, here are 5 practical tips for storing truffles at home.
1. In the Refrigerator
The most effective method for storing fresh truffles is in the refrigerator, wrapped in absorbent kitchen paper, gauze, or a cotton cloth that you should change at least once a day. Make sure the paper is always dry to prevent mold from forming and the truffle from rotting.
Black truffles can last in the refrigerator for more than ten days, compared to a maximum recommended shelf life of one week for white truffles.
2. In Oil
An alternative way to store truffles is in the refrigerator but in a glass jar, covered with olive oil. This way, the truffle will also maintain its freshness for 7/10 days. Just like with truffles stored in kitchen paper, you will need to check that no mold has formed and that the smell has not changed.
This storage method has the advantage that after consuming the truffle, you can reuse the slightly flavored oil to dress salads and dishes.
3. In Rice
We recommend this method less because the storage time is significantly shorter, only 3-4 days. The rice dries out the truffle, making it dry; the only advantage is that the rice will become flavored and can be used to prepare an exquisite risotto. It's a common method: place the truffle in a glass jar covered with rice and store it in the fridge. In short, it's up to you to decide.
4. In the Freezer
Freezing allows you to store truffles for a longer period (about a year).
With a few precautions, you can store your truffle for an entire year. It is necessary to prevent ice from forming around the truffle. After washing it, dry it thoroughly. You can freeze it whole by placing it in a cellophane food bag, using a vacuum sealer if possible, or you can freeze the truffle already ground.
The texture of the truffle will change after thawing. We recommend grating or slicing it as soon as possible after removing it from the freezer, to avoid it becoming rubbery, which would make the operation difficult once fully thawed.
5. In Creams and Sauces
Undoubtedly, you will use some of the truffle fresh. The rest, in addition to storing it for a few days in the fridge, or for a year in the freezer, can be used to make creams and sauces. The storage duration will not exceed 7 days, but you will have the opportunity to enjoy it in different ways. Sauces can also be frozen, and in this case, when you thaw them, they will be ready to use.
